2. When making a whole roast chicken, salt it, then chill it, uncovered, in the fridge for the day. This helps season the bird and dries out the skin so it crisps perfectly when cooked. Pluck off what you need, change the water daily, and they'll last two to three times longer than they would in the fridge. 10. Don't throw away the peel of vegetables. Let them simmer in hot water and add some peppercorns and bay leaf to make vegetable stock. 20. Assemble all your spices before you begin cooking, so you don't burn any. Preferably dry-roast them in the oven (120-140?C) for 3-10 minutes (depending on the spice and quantity-cinnamon for 3 minutes, star anise and black cardamom for 10). Your cue to taking them out: when they begin to release fragrant aromas. 22. Use wholegrains rather than refined ones for baking. In a recipe that lists refined flour as one of its ingredients; there's some form of fat in it (butter or oil). Take baby steps to ease maida out of your kitchen-try 50:50, gradually increase it. -Deeba Rajpal

27. Always use the best extra-virgin olive oil you can afford in your pastas, for drizzling into soups, onto a risotto or for salads. Don't pour the extra-virgin olive oil into a hot pan or else it will burn. 28. For a creamy pasta sauce that doesn't require a ton of butter or cheese, toss a room-temperature beaten egg with the hot pasta and a little of the boiling pasta water and stir like crazy (the heat should kill any bacteria). -Cara Eisenpress

29. Store tea in air-tight jars. Buy a little at a time (100-250 g), as tea absorbs moisture, so each time you open the jar you're exposing it, reducing flavour and freshness. -Sanjay Kapur, master tea taster, Sancha Tea, New Delhi

31. Make a non-messy version of dal to take to work easily: soak the dal, air-dry, add dry masalas (chilli powder, chaat masala, coriander, mint) and ovenroast them. -Pooja Makhija 

32. The lack of a punt (The depression at the bottom of a bottle) is the sign of an average wine. Explanation: only cheap bottles are made without a punt and a winemaker would use a cheap bottle only for an entry-level product. -Magandeep Singh

36 Cut the crown of the pomegranate with a sharp knife, make a few cuts on the skin from the crown to the stem. Then, place it into a large bowl of chilled water. Break into sections, gently separating the seeds from the pulp, which will float to the top while the seed will sink to the bottom. 42. Brew tea this way for maximum flavour and benefit: boil 1 cup water; pour it over 1 tsp black tea leaves; steep for 5 minutes. In the case of green tea, use only 1/2 tsp leaves to 1 cup water, but never allow the water to boil. -Sanjay Kapur

43. Even if you're serving a simple meal, add a touch-garnish by adding an herb or vegetable garnish. You can also use spices. Enhance the setting with flowers or candles. Serve hors d'oeuvres on a rustic wooden cutting board. -Rekha Kakkar

Tips for caring your eyes while using PC/Laptop


During a recent visit to an optician, one of my friend was told of an exercise for the eyes by a specialist doctor that he termed as 20-20-20. It is apt for all of us, who spend long hours at our desks, looking at the computer screen.
20-20-20
Step I :-
After every 20 minutes of looking into the computer screen, turn your head and try to look at any object placed at least 20 feet away. This changes the focal length of 
your eyes, a must-do for the tired eyes.
Step II :-
Try and blink your eyes for 20 times in succession, to moisten them.
Step III :-
Time permitting of course, one should walk 20 paces after every 20 minutes of sitting in one particular posture. Helps blood circulation for the entire body.Circulate among all if you care. They say that your eyes are mirrors of your soul, so do take care of them, they are priceless.

Steps to prepare Chicken Ghee Roast


Ingredients

  • Chicken  
  • Curd 
  • Turmeric powder 
  • Lemon juice  
  • Salt to taste
  • Jaggery  
  • Curry leaves 
  • Ghee 
  • Dry red chilies  
  • Dry red chilies  
  • Black peppercorns 
  • Cloves 
  • Fenugreek seeds  
  • Coriander seeds 
  • Cumin seeds  
  • Garlic flakes  
  • Tamarind paste - 1 1/2 tbsps

Steps to prepare

  • Marinate chicken in curd, turmeric powder, lemon juice and half a tsp of salt for a minimum of 2 to 3 hours or overnight in the refrigerator.
  • Dry roast the red chilies on low flame for 2 mts. Do not burn them. Remove from fire and keep aside. In the same pan, add a tsp of ghee and roast, fenugreek seeds, cumin seeds, coriander seeds, cloves and peppercorns on low flame for 3 minutes. Remove from fire and cool.
  • Grind the roasted red chilies and spices along with garlic and tamarind to a fine paste. Keep aside.
  • Heat 2 1/2 tbsps ghee in a heavy bottomed vessel, place the marinated pieces along with the marinade and cook for 20-22 mts or till its three foiurth cooked.
  • Remove the sauteed chicken pieces and keep aside. Remove the remaining liquid into another bowl.
  • In the same vessel, add the remaining ghee, and add the ground paste. Saute on low to medium flame for 8-9 mts to till the ghee separates.
  • Add the chicken pieces and mix well. Add the left over liquid (while cooking chicken) and jaggery and cook on medium flame for 4 mts. Add salt to taste and mix.
  • Reduce flame, place lid and cook till the chicken is cooked and you have a thick coating of the masala to the chicken pieces. This is not a curry, its a roast dish.
  • Remove lid, roast the chicken for 2-3 mts. Turn off flame, remove onto a serving bowl.
  • Garnish with curry leaves and serve with ghee rice, any flavored rice of your choice or white rice.

Steps to prepare Sesame Crusted Tofu


Ingredients:
For Tofu:
  • 1 (16oz) package extra-firm tofu
  • 1 egg
  • 3 tablespoons panko bread crumbs
  • 2 tablespoons white sesame seeds
  • 1 tablespoon black sesame seeds
  • canola oil for frying
  • green onions, sliced

For Dipping Sauce:

  • 2 tablespoons sugar
  • 3 tablespoons lime juice
  • 1 1/2 tablespoons fish sauce, or to taste
  • 2 garlic cloves, minced
  • 1/8 teaspoon crushed red pepper flakes, optional

Steps to prepare:

  • Slice the tofu into half-inch-thick slices. Arrange on a layer of paper towels in a baking dish. Top with more paper towels, then another baking dish and some heavy objects, soup cans, or books. Let sit for at least one hour to allow as much moisture to drain from the tofu as possible.
  • While tofu is draining, prepare dipping sauce by combining sugar, lime juice, fish sauce, garlic, and red pepper flakes in a small bowl. Add more fish sauce, to taste, if desired.
  • In a shallow dish, beat the egg 1 teaspoon of water. In another shallow dish, stir together the panko and sesame seeds.
  • Working with one piece at a time, dip the tofu into the egg, then dredge it in the sesame-panko mixture until completely coated. Repeat with the remaining slices.
  • Heat a large nonstick frying pan over medium-high heat. Add about 2 to 3 teaspoons of oil, enough to form a thin layer on the bottom of the pan. Arrange tofu slices in pan and cook for about 3 to 4 minutes per side or until golden brown. Transfer to serving dishes; garnish with scallions and serve with dipping sauce.

In today’s fast paced world, the youngsters, the young married couples, children or working professionals, will not hesitate to have one or two big pieces of juice pizza as their dinner. Steps to prepare Pumpkin Pie Cupcakes


Ingredients 

  • 1 15 oz can pumpkin puree
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup evaporated milk
  • 2/3 cup all purpose flour
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda

Steps to prepare

  • Preheat oven to 350 degrees. Line 12 cup muffin tin with silicone liners, foil liners sprayed with cooking spray or just spray the cups with cooking spray. Either of these three methods will make it easy to take the cupcake out after it’s cooked. Paper liners make it difficult to remove the cupcakes.
  • Mix the pumpkin, sugar, brown sugar, eggs, vanilla extract and milk. Add the flour, pumpkin spice, salt, baking powder and baking soda to the mixture. Fill each muffin cup with 1/3 cup of the mixture. Bake for twenty minutes and let cool for twenty minutes. Remove cupcakes from pan and chill in the fridge for 30 minutes. Top with whipped cream and sprinkle more pumpkin pie spice on top and serve.

Steps to prepare Chocolate Mousse


Ingredients

  • Eggs 
  • Cornflour 
  • Castor sugar 
  • Milk 
  • Water
  • Vanilla extract 
  • Whipping cream 
  • Dark chocolate
  • Gelatin 

Steps to prepare

  • An hour before preparing the chocolate mousse, pour the chilled whipping cream in a large bowl and place the bowl in the fridge. Place the beaters in the fridge.
  • Soak the agar agar flakes in 1/4 cup water for at least 20 mts in hot water. (If using gelatin, sprinkle 3 tbsps of cold water over the gelatin and allow to bloom, approx 10 mts)
  • In a medium sized vessel, bring a cup of water to a simmer. In another medium stainless steel bowl (or heat-proof bowl), put the chopped chocolate and place the bowl over the vessel of gently simmering water such that the bowl does not touch the water. Stir the chocolate mixture until melted and smooth. Remove the bowl and keep aside to cool.
  • In a vessel, pour the milk and heat till it reaches almost boiling point. Turn off flame. Allow to cool down to a litte warmer than room temperature.
  • Separate the eggs. In a heat proof bowl, place egg yolks (yellow part), cornflour, castor sugar and vanilla extract and whisk till well combined.
  • Heat a pan with 2 cups of water and place the heat proof bowl with the egg yolk mixture over it. Slowly pour the luke warm milk into the egg yolk mixture while constantly whisking. It will thicken and begin to coat the back of the spoon. Remove the bowl from the simmering water and keep aside.
  • Place the soaked agar agar (or bloomed gelatin if you are using it) over the vessel of simmering water and stir until combined. The agar agar will melt and becomes a clear mixture with no lumps. Turn off flame.
  • Pour the agar agar mixture into the custard mixture and mix. Allow to cool.
  • Now whip the cream until it holds shape and forms soft peaks. Fold this whipped cream with a long stainless steel spoon into the cooled custard.
  • Next fold the melted chocolate into the custard mixture.
  • Whip egg whites till soft peaks. Fold one third of the whipped egg whites into the chocolate custard mixture in a gentle motion. The gentle folding will retain the air make the mousse light. Then fold the remaining whipped egg whites into the custard mixture gently but thoroughly.
  • Divide the mixture into individual serving bowls or glasses and cover with clingfilm. Chill for at least 3 hours or until set.
  • At the time of serving, pipe whipped cream and garnish with grated chocolate.

Tips

  • If using agar agar sheets, place hot water for at least 20-30 mts.
  • If using gelatin, place it in cold water to bloom for 10 mts.
  • Use good quality dark chocolate for best results.

1. Eat food at fixed hours. Do not overeat.
2. Do not eat immediately after a workout.
3. If you are on insulin, make sure you have three proper meals with light snacks in between.
4. Do not eat fast; masticate and munch your food well before you swallow.
5. Drink a lot of water that will help flush the toxins off your system.
6. Make sure the gaps between your meals are short. Avoid fried foods and sweetmeats.
7. Include fresh vegetable salad in every meal.
8. Have at least 20 to 25 grams of raw onion daily.
9. Do atleast 1 hour exercise daily.
10. Add wheat bran to your wheatflour (50% wheatflour + 50% wheat bran). This helps to increase fibre in your diet.

Streptococcus pneumoniae is responsible for more than one million deaths a year, killing children, the elderly and other vulnerable people by causing pneumonia, meningitis, and other serious infectious diseases.
Published in the journal Nature Chemical Biology, the researchers describe how zinc "jams shut" a protein transporter in the bacteria so that it cannot take up manganese, an essential metal that Streptococcus pneumoniae needs to be able to invade and cause disease in humans.
"It's long been known that zinc plays an important role in the body's ability to protect against bacterial infection, but this is the first time anyone has been able to show how zinc actually blocks an essential pathway causing the bacteria to starve," says project leader Dr Christopher McDevitt, Research Fellow in the University of Adelaide's Research Centre for Infectious Diseases.
"This work spans fields from chemistry and biochemistry to microbiology and immunology to see, at an atomic level of detail, how this transport protein is responsible for keeping the bacteria alive by scavenging one essential metal (manganese), but at the same time also makes the bacteria vulnerable to being killed by another metal (zinc)," says Professor Bostjan Kobe, Professor of Structural Biology at The University of Queensland.
The study reveals that the bacterial transporter (PsaBCA) uses a 'spring-hammer' mechanism to bind the metals. The difference in size between the two metals, manganese and zinc, causes the transporter to bind them in different ways. The smaller size of zinc means that when it binds to the transporter, the mechanism closes too tightly around the zinc, causing an essential spring in the protein to unwind too far, jamming it shut and blocking the transporter from being able to take up manganese.
"Without manganese, these bacteria can easily be cleared by the immune system," says Dr McDevitt. "For the first time, we understand how these types of transporters function. With this new information we can start to design the next generation of antibacterial agents to target and block these essential transporters."
The research has been funded by the Australian Research Council and the National Health and Medical Research Council.

Most of us don’t really like to discuss things like urine or feces, but the reality lies in the fact that both of these excretions are crucial for a sound health. The urine is helpful in indicating pregnancy, if you have an internal injury or problem that can’t be detected on the outside or that your intake of some scrumptious colorful berry is a lot more than it should be. Moreover, it can also indicate some Urinary Tract Infection (UTI), dehydration by the change of color of your urine, which means that it becomes darker and more concentrated, also tell if the amount of nicotine or caffeine has increased in your body, especially that of women
 Moreover, if your urine smells funny, then that is normal. I know it sounds weird, but funny smell from the urine is fine. But other characteristics as mentioned above, such as pain or burning sensations can tell a person easily that he or she needs a checkup as soon as possible. Normally, the urine is and should be of a pale yellow color. This is because it contains a substance called “urochrome”; a substance produced at the breakdown of hemoglobin. But urine seems to change color for many reasons; some alarming and some harmless. Go through the different colors of urines and compare yours with them:
Dark yellow: as pale yellow is the normal color of urine, dark yellow indicates that the person is dehydrating as the concentration of salts is higher than normal. Lesser the water, darker the yellow shade of the urine, so try drinking more water than usual in such a condition.
Red: basically this is varying from a shade of pink to dark red. A test can really specify if the urine contains bloods or building blocks of blood such as the hematuria. But this is a serious condition which you must get checked. It can be because of any infection in the bladder, urinary tract, or urethra. Also, cancer in prostrate parts of men or in the bladder of both gender, and strenuous exercise can all lead to urine to be red.
Brownish black: here the color also varies from brown to black. It may be form of red urine in a darker shade. But this is because of malfunctioning of the liver and conditions like hepatitis, bile duct blockage, a tumor or even cirrhosis for the Bilirubin (blood building matter) appears in the urine. But more sever conditions like Hemolytic anemia and Malenoma can also be a cause for brownish black urine.
Orange: many medicines can turn the urine orange or even treatments like Mainstay TB treatment, Rifampin, isoniazid and Phenazopyridine. Also, excessive intake of citrus juices and carrots can also be a reason for orange urines.
Purple: caused by the purple urine bag syndrome, in which bacteria colonize the catheter. The urine consists of substances of red, blue and indigo color which collectively give the purple colored urine. The only cure is to replace the catheter bag.
Blue: blue urines are produced due to the presence of Methylene blue. Though it is used in our medications, the blue urine can also appear because of blue diaper syndrome (BDS) and the hartnup disease.
Green: this is linked to the Methylene blue of the blue urine that mixes with the urochrome of tour natural pale yellow urine. Yet, a few medications such as anesthesticpropofol, Tagamet and Elavil can be the cause of this mixture or green urine. As harmless as it might seem, in rare cases does it ever showcase chances of infections in our Urinary tract.

  • cardamom powder

Method of preparation:

  • Heat the ghee (2sp) in a pan; fry the grated carrot (2cups) until the raw smell disappears.
  • To this add sugar (1cup) and cook for 5min with continuous stirring and add cardamom powder (1/2sp). Stir this until it become thick or the moisture evaporate. Remove this from the flame and cool it.

Steps to prepare Energetic Oats Dosa Recipe

Prep time: 10 min
Cook time: 30 min
Yield: 5
Main Ingredients: oats semolina
Ingredients
  • Oats - 1 cup of dry roasted, cooled and ground oats (I used quick cooking oats)
  • Semolina - 1 1/4 cups (sooji)
  • Rice flour - 3/4 cup
  • Maida - 1/4 cup (all purpose flour)
  • Salt to taste
  • Green chilies - 2, finely chopped
  • Ginger - 1 tsp, grated
  • Curry leaves - 1 sprig, tear (optional)
  • Coriander leaves - 2 tbsps chopped (optional)
  • Buttermilk - 1/2 cup (sour preferably)
  • Water as required (approx 6 cups)
  • Oil as required
Method
  • Mix all the above ingredients except oil and let the oats rava dosa batter sit for half an hour to an hour. It might thicken after a while as rava absorbs the water.
  • At the time of making dosas, add more water such that it is of pouring consistency (like thick buttermilk).
  • Pre-heat an iron tawa on high for a minute. Do the water test (sprinkle few drops of water over the hot tawa such that it sizzles) and reduce heat to low.
  • Pour a ladle full of dosa batter from the outward base of the tawa in a circular motion. Fill the gap in the middle with dosa batter. Don’t drop batter like a thick lump but pour all over, evenly, filling the gaps.
  • Drizzle 1-2 tsps of oil along the edge of the dosa and the gaps in the middle.
  • Increase heat to medium flame and let the dosa cook for around 2 mts. At this point increase flame to high and let the dosa roast for a little less than a minute or so. If you want a slightly softer dosa, turn off heat after half a minute or so.
  • Serve warm with chutney of your choice.
Tips
  • Dry roast the oats on low to medium flame for 5-6 minutes, cool and grind to a fine powder.
  • Prepare the batter at least an hour or half an hour before you want to eat the dosa.
  • The batter should not be thick but of pouring consistency like a thick buttermilk consistency.
  • If you do not have buttermilk on hand, use only water. Sour buttermilk gives a nice flavor to the dosa.
  • An iron tava works best for this type of dosa.
  • You can add grated coconut or carrot and broken cashewnut for variation.
